Sweet corn is about done for the year.

We put our corn under irrigation this year and it turned out great. Wish we would have staggered the planting though because it is about done for the year. Everyone have a good crop this year? Wife is making zesty corn relish tonight.

How do you put it up. You blanch it or fully cook it? I tried putting some up last year in the shuck. It did not taste fresh when I pulled it out.

Got some the other day at Territos vegetable stand on Highland Road.

And I blanch mine when I put it up.

Blanch that shite... fully cool it in ice water...dry..bag and freeze!

Looks awesome. I'm jealous of you guys that have fresh corn. My granny basically creams hers and freezes it that way. Not sure of her exact method, but it tastes awesome and fresh. We're not big on-the-cob eaters, so it works out perfectly.
