Probably remains The Outlaw Josey Wales.

Tombstone is up there, as are The Good, The Bad and The Ugly, The Duke's True Grit, Hang 'Em High, Rio Bravo, Rio Lobo, Unforgiven, Fort Apache/She Wore a Yellow Ribbon/Rio Grande, High Noon, Once Upon a Time in the West, How the West Was Won, Shane, Stagecoach and The Searchers.

Lonesome Dove was a mini-series, and is great in its own right. Firefly can be argued to be a western, as can No Country for Old Men.
