Cooking Croaker??

Got my hands of a half dozen croakers. All about 12"-14" long. What can I do with them? Never prepared them and the only answer I have gotten is "fry them". Anything else?

Scale, slit, rub salt, lemongrass, and cayenne on it, then pan fry.

Makes me drool reading that.

My friends wife scales it and throws them straight in the microwave. I know, strange... but that's the way she likes it.

the causeway is full of em right now. Manchac North pass is as well but they're smaller. Took the kids out last weekend and let em catch all they wanted. We were catching them on dead shrimp but they also liked nightcrawlers. Using nightcrawlers kept the hardhead bycatch down to a minimum.

yes of course. Use carolina rig with pretty small hooks.
