Bizarre Foods in Louisiana - Pig Stomach Stuffed with Sausage

Caught a bit of Andrew Zimmern in Louisiana the other night and he ate something I believe known as Hog Maw.

Looked delicious. Anyone ever tried it? Also, how would one go about ordering an empty pig stomach.....?

It's known as stuffed ponce or some call it a chaudin

I've been in an offal mood lately. I've never really eaten much of it but I order it whenever I see it on a menu.

Looked liked that except on the show they were smoked I think. Unfortunately I was a bit drunk and dozing off at this point. I remember the pig stomach and I remember a frog cookout.

These are smoked. They sell them green (non-smoked) too but the smoked is way better.

Like fin said, teets in ville platte is the spot to get em. They have a jalapeño cheese one that will blow you away.

Didn't Ice Cube's dad in Friday say he wanted some of the hog maw? But since Craig was always all up in da' kitchen, he didn't get any of it.

They make hog maw in south central Los Angeles?!?

Looks like they don't ship to Alabama.

I'm trying to talk my wife into going on an Anthony Bourdain type of road trip. Just drive to different areas and sample their cuisine and nightlife. Looks like Ville Platte will be on the list.

Def get the smoked ponce, the green one just doesn't make nearly as a good a gravy. I know for certain Paul's Meat Market & T-Boy's will ship to alabama; they've shipped stuff to to San Fran & Pitt for me. While you're ordering, make sure to get some smoked sausage, stuffed tasso roast, crawfish étouffée stuffed freyers & boudin. Trust me.

I've had it several times and some were done differently.

I had one that was stuffed with blood sausage, I really enjoyed the richness of this style. It was heavy as all hell but tasty.

The other times were more traditional. It's an interesting dish but not something you want to eat regularly. IMO

Ponce, a regular item for supper at my grandparents. I have not and will ever try it. They butchered and ate every part of the pig.
