I usually dont, and I wonder if it affects the taste and consistency. Cause once I get to around the bottom half of the bottom, it seems to become more watery & lose some of its flavor.

When you first open it, the flavor is more distinct, & the thickness is almost like a paste. Should I be keeping it cold? I much rather it be room temp, but if it's compromising the product, i can change.

I was approached about keeping it in the icebox over the weekend. Never crossed my mind...I'm a cabinet man.

No. But I usually toss it after it goes from a bright red to a rusty color.

R2R got me on to only use the packets to get maximum freshness. Either that or I make my own.

Always. Helps keep hot sauces (Tabasco, etc) from separating also.

I keep mine in the fridge. It takes me a little while to get through a bottle.

My Asian friend told me to keep it in the fridge or it would turn darker if you didn't. Mine is always a nice, bright red.

I refuse to put hot sauce/pepper sauce in the fridge. I hate that.

With sriracha, I actually stared at my bottle a few days ago and debated putting it back in the cabinet vs. the fridge. I read the bottle, nowhere does it say refrigerate. I think I'm gong to stare refrigerating it, though.
