I don't need an excuse to mainline sugar and bourbon .

I did mince some and mix with rosemary and rub a pork loin that I seared and roasted last night. Had a great flavor.

You'll have a bunch of drunks tell you to drink mint juleps. But there are other uses for mint. I like to muddle a few leaves, dump 3 fingers of vodka on top with a little tonic and a squirt of lemon.

1 large cucumber
1 small onion, chopped fine
1 tablespoon fresh mint, chopped
1/4 cup white wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon lemon pepper seasoning

Peel cucumber and chop into 1/4-inch cubes.

Combine all ingredients in bowl and mix.

At Cochon they toss their fried gator in a remoulade sauce with fresh mint. Mint surprisingly went very well with it. Other than that... Mint juleps!

Trying to find a reasonable picture and recipe online for you, but Martin Yan has a recipe for "Savory Jade Chicken." It is a stir fried chicken recipe that uses sriracha, red jalapeno and fresh mint leaves. It sounds a bit odd, but is really good. Probably making it tonight.
