These are just 1 hour on so far. Gonna go 2 and 1/2 this way, then 1and 1/2 hr wrapped in foil with honey, brown sugar, and Apple juice, then 30-45 min straight on the fire with BBQ sauce. Gonna be good.

Normally I'd agree with you. But for ribs I spray them with apple juice every hour.

But I've never foiled them during the cook (I use car wash Mike's method). I wonder if there is really a difference other than shorter cook time.

I'm not waiting 5 hours for ribs.

I'll spend 12 hours on brisket, but I'm not spending a large amount of time on ribs...

I'm sure they're great - I just couldn't justify it personally.

Don't know why anybody spends that much time on ribs. You can grill great ribs in an hour.

Put them in the smoker and let them go. Not really that big of an inconvenience

Agreed. I put mine on the BGE today, left'em and hit a bucket of balls, did some shopping at H-E-B, came back and wrapped'em, took my kids swimming, returned for the finish. It's not like you have to babysit it for 5 hours.

I can knock out a couple racks of babybacks in 3 hours on my egg and they'll be some of the best you've ever had. I don't wrap them at all. Just season and smoke at 250. All this 3-2-1 BS makes for a pile of mush and bones. In response to the OP, IWEI.
