Do most body shops like to install customer provided replacement parts? For example, I want to switch out my front bumper and I can buy it pre-painted online for less than $300. Will the shop install it for me?

If so am I looking at inflated costs for going this route as opposed to them sourcing it and installing it?

I would say that they will inflate the labor to install because they won't make anything off parts and painting...

that said, I would just call a body shop and ask them for a quote comparison of the two scenarios...

I think I will do that. I just don't want to be taken for a sucker because I was asking to provide my own parts.

They should only charge you the $65 per hour labor rate. Probably 3-4 hours labor to do that even if it only takes them 2 hours. They'll have to remove the headlights and possibly the grill to access all of the screws.
If you have ANY mechanical skills, you could swap it out yourself. It's really not that difficult.

What kind of car?

I took the bumper off of my car today actually.. Had 3 screws in each fender well , and 6 screws from the bottom.

Could probably switch one out in 15 mins on my car
