This is my go to recipe for Sauce
2 cups ketchup
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1/4 cup firmly packed brown sugar
2 tablespoons molasses
2 tablespoons yellow mustard
1 tablespoon BBQ Rub
1/2 teaspoon black pepper
Tabasco to taste
Prepare the barbecue sauce by putting all the ingredients into a small saucepan and bringing them to a boil. Turn down the heat so that it just bubbles a tiny bit and simmer it, whisking once in awhile, until it's dark and thickened, 10-15 minutes.
goes great on pulled pork and chicken especially

I use the drippings from what ever I am smoking. Then add ketchup, siracha, garlic and onion powders, mustard powder, and brown sugar. all of these things can be added to taste. I never measure.

For a vinegar sauce, I like to use some apple cider and white vinegar (about a cup each), with a small can of tomato paste, a bit of sugar (call it a 1/4th cup, but really to taste), salt, and a lot of red pepper flakes. Maybe a garlic clove or two as it simmers.
White bbq is just mayo, cider vin to thin out, loads of black pepper, some minced garlic and horseradish (like to use micropplane for both). All to taste.

That looks similar to one I've done before, might try it today for the brisket we got on the smoker

I call this one Blondie
1 cup of apple cider vinegar
1/4 cup of Tiger Sauce
1/2 cup brown sugar
1/4 cup molasses or cane syrup
1/4 cup natural honey
1 cup of Honey Mustard
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery seeds
1 tablespoon Simply Marvelous Spicy Apple Rub
Mix together and pour into a saucepan. Heat it up on medium heat until it starts to bubble. Immediately back down the heat to a low simmer. Let the sauce simmer for anywhere from 30 to 40 minutes. Stir frequently.
Yields about 1 full condiment squirt bottle of sauce.

Memphis Style BBQ Vinegar Sauce:
1 cup of ketchup
1 cup of apple cider vinegar
1 table spoon of chili powder
1 table spoon of paprika
2 table spoons of minced garlic
1 table spoon of Worcestershire sauce
2 heaping table spoons of brown sugar
2 heaping table spoons of molasses
2 table spoons of butter
1/2 cup of water
1/2 cup of honey to the mixture. (This a very tart sauce and it needs the honey. If you find it's too tart add a little bit more)
2 table spoons of mustard
Sauté garlic and butter in a pan until brown.
Pour the garlic and butter mixture into a sauce pan. Add the rest of the ingredients.
Bring up to a light bubble and then back down to a low simmer for 20 to 25 minutes. Stir throughout the cooking of the sauce.
Makes enough to fill roughly 95 percent of your standard sized mason jar.
