Sack of Oysters???

Father in law in New Orleans and willing to bring a sack home, if I can point him in that direction. Any ideas or suggestions would be appreciated and welcomed.

The water is warming up. Get them soon or they'll be mushy with oyster cream.

LA Seafood has given me crap but this week it has been pretty respectable. They usually use Motivatit out here. It's when I start getting Texas oysters that they are shite. My price has been $44/sack as of late. Can't wait for my usual guy to get back on and charge me $20/sack for great Montegut oysters.

Don't go to Wilson's. My dad went last week and they told him they wouldn't have any for a while.

The R think came about from oysters not being handled properly in the summer months, but the warm water makes them milky and they don't taste near as good as cold water oysters...

That is rooted in the fact that month's with "R" in them are typically cooler months...it's really all about water temp. We've had an unusually long, cool Winter...so water temps are actually lower than normal right now. Should be able to still get them, but a lot of places won't sell them or don't have them. Hope I'm not talking out of my arse here

Beside the water temp, that old rule of thumb is rooted in antiquated transportation methods. People came up with that before refrigerated trucks were common place...

Fwiw, I still follow the rule though...

yep...Oysters typically get nice and juicy and tasty during the winter because they are not spending energy on reproduction.

That's why during the late spring and summer they become nice a creamy from all the jizz they've been building up since their reproductive cycle is about to turn back on
