Universities are quickly becoming houses of thought control. What happened to the old school liberals that used to inhabit our colleges? I had some serious respect for them. This new wave of "progressivism" is making me nauseous.

Wow. The concept of "cultural appropriation" as a foundation for being offended is just huge. If this idea continues to gain general acceptance as a form of discrimination, the doors will be blown off the hinges.
Freedom of thought and expression are seriously under attack. It's not just taco night, it's ANYTHING that has been decided by the victimologist liberal intelligencia rabble rousers who want to, AND ARE, controlling how people think and communicate.
Simply put - Words are power. Liberals are trying to extend control over words to attain power. It's working, and the pace is break neck!
How can one seriously be offended by taco night (or whatever) and not be offended by the thousands of other cultural referrences, meals, parties, jokes, costumes, mascots, holidays, etc. etc.?

They always come out with stupid prepared statements apologizing and saying they will learn to become more tolerant and accepting and learn from their mistakes
What we really need is for someone to double down, give these people the bird, and tell them to go frick themselves. Maybe not in such an abusive manner, but at least defend themselves and not cave in, and at the very least not release an apology statement.
For example Rush Limbaugh after Sandra Fluke. He came out with an apology statement eventually, but what he should have done was articulate why what he said wasn't wrong instead of caving to the feminazis.

It's not the people being offended that's the problem.
People are going to roused up over stupid shite every day. Everybody wants to be a frickin' crusader for justice.
It's the people who allow a handful of "offended" nitwits to control the dialogue.
These days, all it takes is literally 2 or 3 people to cry "this is offensive" to get entire organizations to bend over backwards.

Where's the breaking point, though? If someone is not completely laughed out the door for this inanity, how silly will this shite have to get before people decide it's completely ridiculous? I have to say, it's almost impossible to conceive of anything sillier than this one.

It should be up to the "offending" institution to decide what should and shouldn't be removed/altered. In fact, it really is up to them.
The problem (which I alluded to above) is a lack of courageous administrative leadership these days. No one has the courage anymore to say "I'm sorry you find this offensive, but I find it unfair to these sororities/groups/whatever to change something that they do for a good cause and carries no ill intent."
Instead, we get the cowardly administrative leadership. You know the kind I'm talking about. It's the kind of leadership that, instead of risking hurting the sensibilities of overweight kids who are upset that they aren't good at dodge ball, goes ahead and bans dodge ball from PE class.

I don't get it. Are tacos not traditional Mexican cuisine? Is the sombrero not a traditional Mexican piece of attire? It's not like they're decorating the taco bar like a Home Depot or Lowe's, which would be hilariously offensive. These are not stereotypes.
Their culture is being celebrated and they get offended? Hmm, maybe we should just not acknowledge their cultural existence at all.
