I love everything about this and I'm not typically a person that wraps things in bacon. I would definitely give it a shot. It sounds tasty.

I like that the bacon looks crispy. I don't like bacon wrapped if the bacon isn't crispy. Pancetta works well for some pork wrapped foods.
