Square Root reservation system goes live today...

Here is a short little write up on the place, which is expected to open next Wednesday.
I'm not up there yet for this kind of dining, but it sounds pretty cool.

I will be keeping a close eye on this opening. I'm curious how long their business model will last.

I imagine they are doing some major advertising in surrounding areas(Houston, Atlanta, Dallas). I don't think NOLA foodies can fully support their dream.

Like OB noted, they will need a decent amount of the expense account and foodie travelers coming through the doors to support this over the long term.

Tip is included in the $150.

I don't see how anyone could have a 11-12 course meal and not have 3-4 drinks/wine. That's $200-250/head. If they are serving Root level food, this place will implode within a few months.

At that price point, they better be doing "Best in Show" level work.

Could be interesting. I'm not so sure I'm a fan of the wrap around bar. I like sitting at a table with people. $150 + $65 wine pairing doesn't seem too awful bad if the place lives up to the hype.

Ooops, my bad.

I understand that August, Stella, and some other restaurants are doing tasting menus that can get up there in price too and are very popular, but that is with a more traditional menu and setting.

It will be interesting to see how this all plays out.

It's not like this concept isn't successful elsewhere. Brooklyn Fare, etc are wildly successful and the big thing in dining. Even Nashville has a similar concept.

However the big boys who do this type of thing are in much larger, more cosmopolitan cities.

I really, really want to do it, I love this sort of thing. But 400 bucks between me and my wife and drinks is a tough pill to swallow.

Agree. That is around Commander's "Chef's Playground" with wine pairing. I can't imagine it working without restaurant and chef name recognition.

When is the last time you've been to Root? I was there last weekend and man I gotta tell you the food was fricking on point. I can imagine with this level of dining they're attempting they're going to step their creativity and execution up even more .. and like you said it's a fricking 10+ course meal. For $150 that's not bad at all. I've spent more than that per person at August on just 7 total courses. (minus wine).

Per the owners/chef, the food will definitely be much more ambitious, adventurous. They are definitely trying to knock it out the park. El Bulli on a much smaller level, and Brooklyn Fare are the inspirations. Expect to see more molecular stuff.

Even more so than Root? That's quite the gamble for New Orleans I think. Like was said earlier I think this will need to be a regional destination in order to be successful.

Eh. That won't really draw me in. Root's molecular stuff has been the least favorite dishes I've had there.

I just have a hard time paying $150 a head for that type of food/presentation. When you hit that level, I think most people want a certain style/atmosphere, like August. I like Root, but I'm just not looking to lay down those kind of bucks for this type of an experience.
