What is it with girls and their wrists?

My gf had my phone today which is fine I don't have anything to hide. I remembered I needed to send an email for work to a very high dollar account and asked for it back and reached out for it. She held it away from her so I couldn't reach fully to get it(we are were the table). She continued to do so after I asked twice more to give my phone back and she wouldn't. I then grabbed her arm and her wrist and took my phone back and she is furious.

Your girl has an issue with that. Most don't.
I would apologize and hand her your phone. You made an aggressive move and she thinks you're needlessly physical and have something to hide.

Alot of girls aren't gonna like when a more physically strong person (aka men) make a physical move at them because they feel helpless. I'd suggest in the future you just tell her why you need your phone and not attack her in any way. Even if it wasn't forceful, it remind them how fragile some women are.
