What should I make with crawfish leftovers?

Got a ziploc full of crawfish tails leftover from the boil and looking to make something with it. Watcha got?

I made a potato salad using the potatoes, onions, and garlic from the boil. After that, I cut the boiled corn kernels off the cob and folded those in with the leftover tails.

Served it as a side dish to a big arse steak and it was like eating an entire boil in one bite.

we'd usually peel them all and make crawfish etouffe or save some of the heads and make bisque

I was given over 100 lbs for free, told every person I know to come and get some and we still had over 30 lbs leftover. Should've sold them

I had a pound or so of tails and made a pizza because I dont care for a crawfish omelet.

I learned I don't like a crawfish pizza either.

My favorite thing to make with leftover crawfish is a paella with asparagus and peas. Google Jose Andres paella. Add the crawfish right before you stop stirring the rice.

there are tons of stuff you can do with them.

when it gets late season and the price is almost nothing we peel several sacks a week to put away
