I have never cooked with shallots before...

What does a shallot bring to the table that a purple onion doesn't?

Find them sweeter, but maybe that is because of how I prepare them.

They're fantastic. I have a local grocer that sells them in bulk, rather than those expensive tiny bags that you find at places like Albertson's. (Try Fresh Pickens if you're in BR)
They're milder and sweeter than onions, yet pack a ton of flavor. I absolutely love them.

I don't know either, so I'll be intersted in answers. To me a shallot is kinda like an onion/ garlic mix. They aren't as strong as an onion. I've used them when recipes called for them, but don't really know why I couldn't have used a yellow onion. I'm no chef though.

That's about right. And most restaurant kitchens are using tons of them. And they are using tons of butter too. That's why their sauce tastes so much better than most home cooks.

I use them in my mac & cheese. They really elevate it to another level.

I love some shallots. They pretty easy to grow to. They kinda like a small vidalia onion.
