Suggestions for cooking pork chops?

First time posting on here but I cook pork chops often but usually in the oven, and I'm thinking about cooking them on the stove this time because I don't have a grill. Any suggestions

several ways come to mind

1" thick chops, slice in center to create pocket , stuff with fresh sausage (cajun or green onion) , brown and sear in hot cast iron skillet' then bake in oven to finish cooking

de-bone, pound and tenderize, bread with Italian bread crumbs, fry and make a pork chop parmesian, make your own red sauce, serve over pasta and top with cheese (melt in oven)

or "bone-in" chops, breaded with Italian bread crumbs, fry , serve with steamed vegetables and baked sweet potato

I usually just put them on a hot grill with salt, pepper and oil. Cook to an internal temperature of 140 which for a hot grill is a minute or two per side depending on the thickness.

Also here is a recipe from Alton Brown using Pork Tenderloin. I have used it for both chops and tenderloin with great results
