I'm making steak and chicken Tex Mex something. Either fajitas or quesadillas. Or tacos. Wouldn't throw burritos, chalupas or tostadas out the equation either. And I don't even know what a tostado is.

The dogs and I had the leftover chicken thighs and rice and gravy. Lucy will have the last of the pasta, ground meat and French bread.

I've got to take puppy into the Vets office tomorrow for his last set of shots so that will mean shopping at Brookshire's Deli.

They have some fresh catfish fillets but I'm tired of frying them. Any other ideas? Like baked catfish?

Season the catfish with a low salt (for you) blackened seasoning and sauté over med heat in a few tablespoons of butter and olive oil. Lightly brown both sides...about a 4 minute process, depending on the thickness of the fish...it's bronzed....and good.

Yuuuuuum!

Tonight is the last night I have to worry about school until next weekend but ugggghh.. I want wine and a cheese board for dinner .. And no studying!
