For the rest if your life and it can only be harvested by you and you must still abide by regulations. What do you choose and why? Yes, I'm bored.

If this was all of the meat I would be able to eat I make it hog meat because there is both fat and lean hog meat and once in a while I would want some bacon. If all I could eat for the rest of my life was lean venison I would grow bored quickly. Hogs are also abundant. As far as fish meat I would choose catfish simply because they are abundant and can be caught almost anywhere. I would choose speckaled trout but I don't want to go without meat if I travel inland. Am I over thinking this?

If hog is considerd wild game I may need to re enter the conversation. I don't think it qualifies based on the wording of the OP.

Pretty sure you are Dan. I'll take White Perch and Deer. Or maybe Buffalo.
