Bought a pork butt yesterday to smoke on Friday, it had a sell by date of feb.27, is it ok to keep in the refrigerator until then?
Now that we've got that out of the way, what are the secrets to great pulled pork? Does everyone brine? Or just a heavy run the night before smoking?

Bur i always keep any meat in the coldest spot in the fridge that won't freeze it.

Your fridge may actually keep it better than those bins at the grocery store. I can't tell you how many times I've reached for packaged meat and it sure didn't feel 38 degrees.

ETA: Since my post, the title has changed.
