Had some in the freezer. Grilled it on the gas grill and made a horshradish sauce. Made poboys with it. Darn good flavor in that sausage. Well seasoned with some chopped veggies in it. Enjoyed it.

I think I've had Don's as well, but it's been a long time. I would buy Rouse's again in a heartbeat.

Sounds good. Not sure I've seen that down here. Wonder if that is a regional offering? Maybe I need to look again.

I bought it at the Lafayette store, but I believe I'd read about it here before that store opened, so I assumed it was made in Nola as well. Maybe ask the butcher. Mighty tasty offering for a fresh sausage.

I disagree. I don't care for it. It is just an easy way to ruin a ribeye and charge way too much for it.

The butcher is making use of the unused pieces of a ribeye that didn't make the standards of being included in a steak. He is doing his job as he is supposed to do so, maximizing profits instead of throwing the bits into the trash.

ETA Are you a butcher working for a paycheck? If the answer is no get down off the horse you're riding.
