Post your favorite taco recipies

Looking to maybe try something new.
My favorite is to brown seasoned cube pork shoulder then add diced onion, minced garlic, a couple cans diced chiles, chicken stock and a big jar of green salsa. I will let this simmer for a few hours until the pork shreds and the liquid has reduced. Throw the pork in corn tortillas with a sauce made of sour cream, avocado, cilantro , and thinned with a little cream. Throw on some crumbled queso and some pickled red onions.

take some raw tuna steaks. cube them into 1/2" pieces. soak them into lemon/lime juice overnight. serve with cabbage (vinegar'd) on floured tortilla.

imma dead cow/taco seasoning, in a crispy shell with cheese, maters, lettuce or pico with a good supply of sauce on each bite sort of guy.

I like to make carnitas out of pork shoulder and chop up
Serve with some corn tortillas that go in the pan with some oil for a few seconds and top with white onion, cilantro, and serve with lime.

Currently doing the one in my op and a new one. Browned pork. Added onion and garlic and sautéed. Added 2 packs sazon Goya seasoning T chili powder and can of chipotle peppers in adobo and a bay leaf . Sautéed a bit then added chicken stock.
Im also trying something different with my salsa verde pork. Added 2 cups criollo mojo for my pork to simmer in.

You want to do something different? Do cochinita pibil with the pork.
If done right, this stuff is delicious. The only issue you might have is finding the achiote. It usually scares people because it kinda looks like red crayon in the package.
My favorite place does it with the pickled red onions and I usually eat it on white corn tortillas.
