I have been on a vinegar kick, and have got some really good balsamic that I am just using hodgepodge on just about everything.

Aside from vinaigrettes, glazes, and dips what are some other uses/recipes. I have used it as a glaze on pork chops tonite and it was really a good complement. Just curious as to how else to incorporate.

If it's good stuff, drizzled over sliced LA strawberries is really good.

You need to spread your wings a bit. Balsamic vinegar comes in many forms from many sources. It is like the different nuances of extra virgin olive oils to taste test about what works with each of them. It sounds weird, but vinegar over strawberries is a knock the ball out the park home run. Use it(try taste testing as many as you can over time) in what ever manner you desire. You have only touched the surface. A personal favorite one is a raspberry infused white wine vinegar.

Off the beaten path, but we combined it with brown sugar, corn starch, soy sauce and a little water...made a brown sugar glaze for a pork loin in the crock pot...was really good!

Add some balsamic to browned butter in a skillet. Toss in al dente pasta, chopped oregano and fresh grated parm along with a little salt & pepper.

That is hard to beat for sure. Balsamic over sliced cucumber and red onion is great too.

I used it once while boiling eggs, was out of white vinegar. Egg shells turned brown/purple, but peeled easy. Was one of my best kitchen MacGyver moves yet.

Only if you reduce it first. I don't like it watery.

wait until summer, and have some over a watermelon salad. Squares of watermelon, buffalo mozzerella, strips of fresh basil leaves and cracked pepper with a drizzling of balsamic. I know it sounds weird, but pretty damn tasty.
