I've got two thick 12-oz loin chops that I've butterflied, slathered with a sesame-apricot preparation, rolled (lengthwise) and trussed. Almost exactly like two miniature stuffed pork loins. I know my cooking time and temp for doing a whole stuffed loin (250 until 140; ~ 4 hours). Looking for a ballpark temp and time to do these two little guys.

My initial guess is 325 for about an hour to an hour and a half. Any opinions?

TIA

Well, 325 for 1 hr is one way to do it.

You may consider closer to 400 for 40 min or whenever you hit 140'.

Thanks - do you think higher is better because of the small(er) size?
