My little rat terrier has picked up on flushing rabbits out of the woods on my property lately leaving me with some good shots to pop a few with the old .22. Besides using the meat for gumbo, anyone have any good ideas on how to prepare them?

What sides normally go good with the piquante? Figured that the people I'm cooking for will all go for this dish.

And thanks to everyone for the ideas, definitely going to make note of all of them for the near future.
