Please school me on Vietnamese cuisine

I've been living in Hawaii for the last 4 years and Viet food isn't nearly as popular here as Japanese or Thai. When did Vietnamese become the rage in Louisiana? What's it like? What are the best dishes? What is Pho? Add in any other things I might need to know please.

Pho is a noodle soup in a broth usually made of beef or chicken and other spices. It's very good.

Viet food is big in La. because there is a large View population here.

Pho is a noodle soup made with a meat broth, typically beef. The noodles are thin rice noodles and usually any number of beef cuts such as brisket, steak, tripe or meatballs are added along with fresh veggies.

Bun Bo Hue is a similar soup made with beef broth and vermicelli noodles. Again fresh veggies are added and the meat is usually pigs knuckle and congealed blood cubes. The lemongrass flavor is very prominent.

Banh Mi is a sandwich very popular in the States. Think of it as the Vietnamese answer to the po boy.

Vietnamese egg rolls are what most would call "Chinese" spring rolls. Vietnamese spring rolls usually use a thin transparent wrapper and whole shrimp.

nice little succinct write up. good place to start with pho and egg rolls.

also I'll throw in one of my favorites.. grilled pork with rice add a fried egg.

I do find I enjoy Thai food much more. I like Vietnamese food, but I always found pho to be not very flavorful (though very fresh).

Viet Grilled pork and rice, and a good banh mi, are delicious. Houston has a hundred banh mi joints, and the sandwiches are only around $3. It's a steal.

Pho is a gift from the heavens. It's my all time favorite thing to eat for breakfast. Crack cooked down into a beefy broth.

If you could only wave your hands over this bowl of pho, the smell would help you understand the beauty of pho and its deliciousness.

Near the end of the Vietnam war a lot of South Vietnamese came to America (immigrant/refugee status). A large number of them had been fishermen by trade so it was natural for them to settle in South La. to continue fishing.
