Traditionally I have...but I didn't brown the andouille last time and it added more flavor. But this is regular Manda smoked sausage (for chicken/sausage)I'm talking about so...
Brown before or not?

I bake in oven, remove before it busts, let cool some and slice.

Yes. Either roasted in the oven or seared in the pot.

Smoked sausage yes

Andouille yes, but not nearly as much as the smoked sausage..... maybe 10 minutes on the smoked sausage and 3-4 on the andouille.

Always brown the sausage, gives it more of a crunch. Plus I use some of the rendered fat for the roux since I make the gumbo all in one pot

I do not. It dries out and gets chewy if you do.

Do you de-bone it first?

Nope. The only thing I brown is the roux. A good sausage doesn't need browning...
