Help please. Mirliton Dressing

Made it by a John Besh recipe however after baking the mirlitin pieces are a little crunchy.
This is after baking at 350 for 45 minutes and then in the dressing cubed and another 30 minutes.
I didn't think that they should be crunchy like an apple. Am I wrong?

Never had a crunchy texture in any mirliton dressing I've been served.
FWIW I find all John Besh recipes I've used to have strange preparation instructions and/or ingredients. I have one of his cook books and I've more or less given up on it.

I usually par boil mirliton before using in a casserole. Needs to be tender before you bake with the other ingredients.

I can't fathom why you would get crunchy out of a melirton that was boiled for thirty minutes to extract the flesh from the skin.

I just checked his recipe on several different sites. Besh says to oil and roast the melliton for 45 min or until soft then peel. Not the way we have ever done it. My grandfather raised them for years back in the 60's $ 70's. We always parboiled first.

I par boil, peel, then de seed & mash.... mix with seasoning & either ground meat or shrimp and Italian bread crumbs,
bake hour or so at 350 ish
