Cooking a Goose

Someone is giving me 3 Goose breast. Can anyone recommend a good way to cook them?

Hate to hijack but my son just got back from goose hunting in Colorado with 42 lbs of Canadian Goose breast meat - greaters and lessers. He cooked a gumbo tonight with breasts and sausage that was pretty good he said. Other ideas?

I saved my turkey carcass from Thanksgiving in the deep freeze...going to make a turkey gumbo and add the geese breasts to it....that's the ticket!
