Gave lil chopiique some props when he was barely old enough to stand

Met him at a fishing rodeo when he was younger than I am now.

He sure added a lot to channel 4 while he was there. Although I HATED to see him on TV in a spot I liked to fish half the city would be there the next day.

To this day his macaroni and cheese recipe is a fixture at Thanksgiving and Christmas in my home.

Ingredients:
1 lb. cooked macaroni (#7) I use the medium shell pasta
2 whole eggs, well beaten
1/4 cup finely chopped parsley
1 stick of butter
1 cup chopped onions
1/3 cup celery 1 cup light cream
2 cups medium-sharp cheddar cheese
1/2 cup Swiss cheese
3/4 cup Velveeta chesse
salt and pepper to taste
Directions:
Preheat oven to 350 degrees
Place cooked pasta in a buttered casserole dish and thoroughly mix in the 2 beaten eggs and parsley.
In a saucepan melt the butter over medium heat and saute the onions and celery until they wilt. At this point, stir in the cream until blended well. A little at a time, start adding the cheeses to the sauce- first, half of the cheddar, then Swiss and finally Velveeta.
Stir constantly as you add cheese so that it won't stick to pan and burn. Heat remains on medium.
Add salt and white pepper to taste and pour evenly over macaroni. Mix very well! Sprinkle remaining cheddar cheese on top bake in oven for 35- 45 minutes or until cheese on top starts to brown.
Before serving, put under broiler for a few minutes to toast the cheddar on top.

I'm surprised all the love for him I'm hearing these last couple days. I grew up in Slidell and always just heard how big of an a-hole the guy was even though he was good on TV. I don't know one way or another but just find it interesting now.

I have heard that over the years. But I had dealings with him on a personal level several times including back in 80s when he did a segment with a friend of mine that was a chef...

I also remember well when he was MC for a fishing event I was in(i placed second and the person in first cheated - many knew it... ) Frank handled it with class...

the problem most people have with well known people is that you think they owe you your 15 minutes - they don't... sometimes they give it..

but sometimes they give you your 15 minutes... even if they worked all night the night before or were on the road for 10 hours....

the main people i have seen say he was an a-hole.. were people that tried to tell him how, where and who to fish with, and people that tried to tell him how to make his recipes better....

I saw him do his show back in the 80s of the guys that were walking 50 feet on one piece of angle iron 25 feet above the water to fish under seabrook and most of em couldn't swim.... and then he spent a LOT of his own time getting a catwalk and railing for those guys that fished there....

I also saw him after a fishing event go find some obviously underpriviledged kids and give them fishing tackle....

with as many personalities and some with much more political clout wanting his slot...

he carried himself pretty well in my book.... and I don't say that about a lot of people...

always wondered why exactly people were calling him an a-hole but you're probably right, just people trying to get in his face during his personal time

also ran into him one day when I was fishing with someone else who did a NOLA fishing show... and the banter between the two hosts was hilarious...
