Sausage Makers

Ive ordered a sausage stuffer for my grinder. My question is what spices do y'all add and how difficult is it to get right? I've seen some spice packs at cabelas but I'm sure y'all know of some Cajun recipes that will be better. TIA

Rouse's.....try the cajun or the green onion Sausage mix, one pack makes 25 pounds.....you have to ask the butcher for it.

Very easy to make, just put the amount of spice to the amount of meat.

I steer clear of the cabelas and bass pro brands. I've used Leggs, Deep South, and southern style here lately. I mix it them cook a little on the stove to taste before putting in casing.i usually end up adding more onion, garlic, or something to it. Can find saugsage seasoning at most local grocers. As the butcher for what he uses and casing. john's curb market in Walker has the best selection of sausage seasonings that I know of.

Like wick suggested, you need something to mix it in. I always mix in a big ice chest, but I'm usually making 100lbs or so at a time. Take your time and mix it well. You'll have to get your hands dirty.

I live in north ga so not sure if they have that here.

Zero issues with getting my hands dirty. Hell that's the fun part of it. I'm just not sire what spices to make for different type of sausage. What I typically eat is grilled casing sausage and breakfast sausage. Obviously I don't have to use to stuffer for breakfast sausage. But wasn't sure of different spices.

Anything online I can buy since I'm not.local?

My villaware grinder came with a sausage recipe book. Your basic spices at any grocery work fine. I normally do basic Italian, breakfast/sage, or green onion,

You can get as creative as you want, ant it is hard to mess up as long as you stay close to ad a little above the recipe amounts. Last month, my dad and son helped and each invented their own style. My son made an Apple and cartelized onion batch and my dad made a roasted Greek batch.
If I was home I could post a photo of a couple recipes.

I found a couple photos of recipes, and a photo of my grinder. It's a really basic setup, but it works and the motor never burns out...
The meat I use for sausage is half venison and half Boston butt,, cubed, ground and mixed.

As others mentioned, I've primarily used the pre made mixes from Deep South and Southern Style as I can get locally at some stores. I've ordered some smaller seasoning packs (makes 10 lbs) from www.sausagemaker.com. They have a bunch of varieties. Haven't tried the "cajun", but have tried the roasted garlic. Was impressed and for $4.99 and free shipping, worth the gamble.

you can also custom order your own blend if you have a recipe

I noticed you are using the hand grinder. I just bought the masterbuilt grinder bass pro had at thanksgiving for $100. I was debating bringing it back and getting a hand grinder. Whats the OB's thoughts? Never made my own sausage before

Power is the way to go. I used hand crank power, and I will never go back. I bought a 3/4 hp grinder that I can process a deer into sausage in a hour. As fast as one can feed it, it grinds. Cost around $300. The 1/2 hp will work too, but I'm like Tim the toolman. More power.
