If I buy a Texas non resident hunting license in December, can I use the same license in January? I am going on a couple of hunts in early December and early January and I'm hoping to not have to buy the license twice.

Yes. I do that every single year. It is good for the 2013-2014 season. It will set you back about $300 or so though.

You won't have to buy two. Mine was bought in December 2012 and says valid until 8/31/13.

Haven't gotten out to the camp this season yet

We get the license and are usually only able to make the one trip every year. Some times we get lucky and make it twice. It's well worth every penny IMO.
