Potato Soup (w/pics)

So for the game Saturday, while it was a little chilly outside, I decided to make some potato soup with grilled cheese for the few friends that came over. Came out great as usual and is very easyb, just wanted to share. enjoy
Cut up a few onions, green onions and garlic.
Here are onions:
Peeled and cut u potatoes, saved maybe 2-3 to add to soup later for more chunks.
Sauteed aromatics in bacon grease and butter.
Added potatoes and chicken stock (no not completely homemade, had to add some store bought) and brought to a boil until potatoes were tender.
Used potato masher and mashed potatoes really well. Added some milk and whipping cream and let slimmer really low for about 30 mins to let flavors meld and potatoes to get even softer.
in the meantime fried up some bacon for topping!
Added the rest of the potatoes to the soup, raised heat slightly and simmered until they were tender. Then cut off heat.
While soup was on its last simmer, I fired up the trusty old Foreman grill, slathered some texas toast with butter on both sides and put some cheddar and swiss in there. Topped the soup with some shredded cheese and bacon. Everyone enjoyed this way more than the game!

Looks really tasty right about now. I'm a sucker for La Madeliene's potato soup. I feel like a salty fatass afterwards, but it's worth it.
I use similar ingredients, but puree mine. I don't like it chunky. Same with potato salad. I keep it simple until I add the toppings. I usually use crispy bacon, more green onions, of course, cheese and sour cream. It freezes well in it's simple form. I keep it for days I feel puny in which case I eat it plain. If I'm good, I load it. I think my recipe is in the recipe book.
