I found some frozen chicken broth in the back of my freezer, and I'm not exactly sure how long it's been there. Do you think it will taste freezer burned or a little off? My best guess is that it's been in there for a year or so. I cleaned out most of my freezer after Thanksgiving last year, so I'm pretty sure it's been since then.

Will it ruin the gumbo or do you think it's safe?

I'm too embarassed to say how long crawfish stock was in my freezer before I finally got around to using it. But let's just say months. And months.

And it made a great etouffee.

I wouldn't risk it on gumbo I serve to other people, but if not then go ahead and use it. Or just heat it up and taste, and have a spare can on hand just in case it sucks.

This is the best way to go.

I'd say it would be fine unless covered in frost.

From a microbial point, it will still be acceptable.

I can tell you, from experience, you've got more than a few months, like a LOT more than a few months. Defrost it, taste it, then decide.

I had gumbo stored for way too long. Ate it a few weeks ago, I'm still alive.

If it's JCPenny stock you need to get rid of it immediately.

OK, I couldn't help myself.

I just made chicken wild rice soup from stock that was a year old. It was still quite tasty.
