Please suggest a fry rig.

I'm tired of my fry daddy rig dropping down from 350 to 180 when I drop some fries in it, but I don't want to get a huge 5 gallon rig either. Anyone have something in between that they are real happy with? Thanks.

Smaller batches is the easy answer. There are larger fry vessels out there, but the fundamentals never change. Don't overload it. Maintain temperature.

Completely agree with this.
I have a T Fal deep fryer that is awesome. You can find them on eBay for not too much.
But I do agree, do it in batches. Don't dump the entire bag, or thereabouts, of frozen fries in the oil.

You can get the DeLonghi off ebay for around $60 shipped I believe. Best part is the drain valve on the bottom located right below that EASY CLEAN tag. Just drain it back into oil jug and reuse grease. Grease doesnt burn like on a fry daddy, due to the heating element being suspended instead of the entire bottom surface.

I use a cast iron dutch oven with a wire basket on a banjo burner. I use a C-clamp to attaché a regular file to the side of the burner. The basket has an attachment that slips over the file to drain the oil.
I have two sizes one for 6 or under and the other for more than 6 people. I use a thermometer, perfect every time.

Lat time I was at Ducotes I saw some they had on sale. Little countertop 2 basket electric models.
You should go check them out anyway if you've never been. They have some cool stuff in their store.

My dad tries all of these countertop fryers and wonders why his fried stuff is soggy. I suggested he drop a deep fryer into his outdoor kitchen, but in the mean time, a cast iron is all you need.

I don't know if it is the right size but the link above is what I use with cast iron. I tried many electric fryers with good results but they take way too long to come back to the proper temp after finishing a batch. My cast iron rig comes back to proper temp in 30-60 seconds.
