if you could take a horror film, and turn it into a 8-13 part season today

With the original cast and you had the time, budget and a team of respected writers..
What movie would you choose?
I think I may would go with "the thing (1982).

Many horror films have efficient plots. It's not like you would even want to do something like this with Alien or The Thing, etc. At least I wouldn't, those are perfect or near perfect films.
Can I throw out some of the original cast?
Prince of Darkness or In the Mouth of Madness certainly (to keep with Carpenter).
I think there's an elongated story to be told with the Friday 13th Universe. Certainly one that could be told over 13 episodes. Rewrite some of the mythos, have a long 3-generation storyline. Could be fun.

I'm disregarding your original cast stipulation and saying Stephen King's IT.
Within your guidelines, Nightmare on Elm Street. I don't dislike the film, but think it would transition well into an 8 episode mini-series.

I have to disagree, now..I did choose the thing because I did like the movie.
The isolation and paranoia would have made for some good stories..not to mention Kurt Russell is great. I think if we could have seen some more character development over that period of time with the tv quality of like a breaking bad or game of thrones..i think it would make for some awesome story.

Even though I know it's fake I think a series on the couple from The Conjuring would be good.

Which was all amplified because it was in a short time frame. It was fast-paced. Lives were in the balance NOW! This is a good thing.
More is not always better, especially in the case of something so well constructed. There was nothing left to tell in terms of Carpenter's The Thing.

A lot of good story comes out of conflict. likI said, the isolation and paranoia would be great. If it served the story right, The show could be based over the course of maybe a week. In my mind's eye I can see how that story could be told,
I get where you're coming from though, I'm protective over some things too..but that would make for a great story setting that a lot could be done with.
