What is your go to back strap recipe?

I figured I would grill/smoke the little tender things this weekend. I know the little man is going to want to eat what HE killed. What are some good recipes that yall use?

Salt/pepper and a fire hot grill to sear.
You can pound and fry the rest of that shitty meat. Don't frick up the strap.

whatever it is.. if it doesn't start with properly aging... meh....
Keep the tenderloin whole.
fresh cracked black pepper and sesame seeds in a plate. roll the entire tenderloin in the plate to cover completely.
Grill to medium rare, let rest 5-8 minutes. Slice and enjoy

Well, if you've aged it you can do it hot and fast. If you haven't aged it, I'd go low and slow. Maybe some medallions in a nice brown gravy.

This. Except I cook it on the stove in a cast iron. Planning on doing it Wednesday and can't wait, making room in the freezer for fresh meat.

I do this for pork tenderloins from the wal market, but not good venison. You forgot the brown sugar though.

Boudin
Butterfly, stuff, wrap with bacon, grill over charcoal
