Need ideas for leftover chicken

Smoked a couple whole chickens and did not have as many eaters as anticipated. Have quite a bit left. Do not want chicken salad. Any ideas?

Or a coconut milk curry thing.

I've done quesadillas, caesar salads, gumbos, jambalaya, etc. Possibilites are endless.

(1)Bring it deboned to Calvins and get them to make you some chicken salad. Anything else is an immitation

This. I like to cook a chicken or two first part of the week just to have on hand. Cooked one last night as a matter of fack.

Chop them hens up and serve over couscous with some corn / green beans / onions / whatever you please. Couscous in the box is easy, quick, and cheap.

Chop it up really fine.
Spread over chips.
Add jalapenos and salsa.
Microwave.

If you're an infidel you can also add cheese.

I have chicken nachos once a week. My japs will produce until Dec.

Heat until cheese softens

Zach, I once order a Philly Cheesesteak that came with no cheese. Absurd, obviously. Only thing more absurder I can think of is eating damn cheeseless nachos..
