I am making the above for dinner. I am looking for any advice on my methods/ingredients.

Typically, how i do it. (I also understand, if it aint broke - dont fix it)

I purchased ground sirloin for tonight. Mix bread crumbs or white bread, egg, seasonings, diced white onions, meat. Fry a little bacon, brown the steaks in the bacon fat, remove meat. Add flour, a little beef bouillon, water/cream for a gravy. Stir/roux gravy until consistancy desired and replace hamburger steaks. Simmer until ready to serve.

For my mashed potatoes: I boil potatoes, add butter, sour cream, milk, and fresh grated smoked gouda & parmesean cheese. I have fresh chives to dice....season with salt/pepper.

I have clipped the ends on some fresh green beans. Planned to sautee them with kosher salt and cracked black pepper in some evo.

Any suggestions on additions, changes, methods here? My gravy is never the same. Ever. Sometimes add mushrooms and sautee onions....but unlikely tonight. Not sure. Red wine addition a good idea? Ive done it before and thought it to be a tad bitter.

Sounds absolutely delicious, especially with the heightened preparation and ingredients.

Blanch beans, then saute them and season, you might want to consider diced tomatoes with them.
