What are some essential knots that every outdoorsman should know how to tie and what are these knots best used for?

Bowline - Tying off a boat or making a good end loop in any rope.

Half Hitch - Quick knot for tying anything to anything.

Trucker's Hitch - Better than a half hitch, because you can add tension to keep whatever you are securing tightened down.

ETA: For fishing, I use Palomar, uni and improved clinch a lot.

Paw Paw was a Squid. Learnt this one while still in diapers. Think I actually used it on my own diapers.

Also learn to braid for putting eyes in snatch rope. It's very simple.

Palomar
Loop
Surgeon
Half Hitch

My favorite is a right angle knot, discovered during my Navy time, easy to tie, easy to untie. Lots of applications.

Snell knot for flipping, pitching & punching. Pressure on the hook eye kicks the hook up into the top of the fish's mouth. Google Bub Tosh for a good instructional on how to tie his version.

The cow hitch is a great knot to know, my wife and I have experimented with several knots and we enjoy this knot the most.

Snell knot

Power snell the best. 10 X faster to tie for offshore fishing.

Also great to use for fishing turtles or drip lines.
