I've got to make a potato salad for a gathering

And I need some different ideas. I've got the standard, mayo, bit of mustard, vinegar, boiled eggs, onions etc...
I don't like hot potato salad.

I like normal potato salad made with Yukon gold potatoes. When people try to fancy it up, it honestly doesn't appeal to me. The best is simple old fashioned unadulterated good old potato salad with lots if green onions added while the potatoes are hot. I add the pickles then also.

Green onions, little bit of good crunchy celery, DILL pickles, add a little pickle juice. U got the rest covered..

I don't like a starchy potato salad, so I always boil reds and then let them cool. I like a little celery, little minced onion, mayo, mustard, eggs, maybe some pickles of some sort, black pepper, paprika, salt, tarragon, parsley.

Well I use white vinegar in lieu of the pickle juice. I'll add the celery.

Vinegar is fine, maybe a little bitty shot of red wine vinegar to go along with white for a tad more lip curl, and we both know, bacon hurts nothing, capeesh,,

I like to use red potatoes and in addition to the typical eggs, mayo, salt, onion, I add creole mustard, red wine vinegar, horseradish and little thyme, garlic powder and red pepper. I always get compliments on the addition of horseradish.

I put horseradish in deviled eggs, but not in tater salad for "a gathering". Too many kids and ole folks can't handle the hoss radish, IMO. The ole folks used to like it, but you'll catch em blowin' their nose on your napkins, hopefully they aren't cloth..

Well it's not a lot of horseradish. I add about about teaspoon for every three pounds of potatoes.

I do not like a mustard potato salad. Terrible as a bed for gumbo, etc.
Potato, egg, mayo, salt, pepper.
No crunch. No dill. No mustard. No pickle. No celery.
Bacon sounds like a nice touch though.

It's legit. You just add a quick splash of red wine vinegar, gives it just the right extra layer of flavor.
Eta: I do everything that most have mentioned on here, but instead of celery, I like to add some finely diced red pepper...you get that texture, and it adds a little color too.
