Hog Processing

My niece is raising a hog for an FFA show in Houston. After the show, that lucky hog is going to be shipped to my in-laws in Baker, LA for processing.

Does anyone know of a local processor that will do the whole hog, including cracklins??

They contacted someone in Plaquemine who will process it, but they don't do cracklins.

Any recommendations??

My family does their own and my husband and his buddy cooks the cracklin.... don't have any suggestions though , sorry.

I haven't heard of anyone doing cracklins commercially in a long time...

Call Decuir's meat market in Erwinville 627-9941. Nice people and I think they will do whatever you want
