What is your go to recipe? I am going to make some this week out of a pound of ground deer. Girlfriends daughter said meat sauce wasnt enough, she wanted meatballs in her spaghetti.

I use this one, but not with deer meat.

I think Otis has one in the recipe thread or book.

This is what I use. Kind of labor intensive but they are good!

I can't have ground beef so I make mine with ground turkey, italian breadcrumbs, a little grated parm, egg, and a little diced onion. I'll then take some fresh mozz cut into small cubes and stuff those in the center of the meatball as I'm forming it.

Bake in the oven until browned, then remove from the pan and put in a saucepan with sauce of your choice until good and coated.

1/3 cup grated Parmesan cheese

A pinch of nutmeg in them gives off just that little kick that you need.

From the Recipe Thread:

2 lbs ground beef
2 eggs
2 cups bread crumbs
1 cup good parmesan cheese
3 T ketchup(guess the recipe got Americanized)
3 T Worchestershire sauce
salt and pepper to taste...and I add some red pepper flakes

Mix all together and use an ice cream scoop to form the balls. Put in a 350 oven for 15 minutes and then add to your sauce and simmer for up to 4 hours.

From Dom Delouis's Cookbook, "Eat This. It'll Make You Feel Better."

Dom's Mom's Meatballs

Ingredients
2 lbs ground chuck
1/2 lb ground pork
2 cups Italian seasoned breadcrumbs
4 eggs
1 cup milk
1 cup fresh parsley ( chopped)
1/2 cup grated cheese
1 tablespoon olive oil
2 garlic cloves ( chopped fine)
1 onion ( minced) 1/2 cup pine nuts (optional) Directions
Place all ingredients in a large bowl and mix thoroughly; let stand 1/2 hour. Shape into medium-sized meatballs. Fry gently in olive oil until lightly brown, or place on foil in a cookie sheet and bake in a 350 oven for 30 minutes. Gently place in your own hot spaghetti sauce and cook on medium-low heat for one hour.
