Help with beets

I'm a fairly adventurous eater, but had never tried beets, something about the look and texture of canned beets that didn't appeal to me. So while eating out a few weeks ago I wanted a main course that came with roasted beets. I tried them and really liked them. I decided to try to cook some this weekend. Found a recipe for a salad with roasted beets. Bought fresh beets, scrubbed under running water, cut the top off, rubbed with olive oil, put on the smoker for a couple hours. After it cooled a bit, rubbed off the outer layer and sliced. They were tender, but not mushy. Put a little vinaigrette on them, and.....they tasted like dirt.

Since it was my first time cooking them, I really have no idea where I went wrong. Maybe I just bought some bad ones-they were fairly large, how I prepared them, the way I cooked them? Not really sure. Looking for tips, advice, or recipes. Thanks.

I roast them for about 30 - 45 mins depending on size, until you can stick a fork in them like a perfectly baked potato. They are really good with goat cheese too.

I've never had this issue. I've grilled them and roasted them. I usually do thick slices with olive oil and s&p. I recall reading, however, that there's an ingredient in beets to which some folks are very sensitive that makes them more earthy, I think. It might be somewhat like cilantro. Some folks love it like myself. Some folks like my Mom think it tastes like soap.

I've never had the problem either, however I don't buy large ones. Its really not beet season yet, its a cole vegetable.You can roast or boil them. Next time try a little butter on them, hot. Tastes like corn on the cob. When they're in season we eat them hot and cold, we love 'em

I guess I'll try again. Maybe go with some smaller ones next time.
