Help me do something with all this rice

I cooked way more rice than I intended yesterday so now I'm trying to find ways to use it before it goes bad. Unfortunately, I'm really lazy and don't feel like cooking tonight. Should I:
a. serve it under Gumbo tomorrow for the game despite the heat
b. serve some under "instant" red beans and rice (Trappy's or Blue Runner)
c. defrost some chicken and do something with that?
d. really great, easy recipe suggested by random poster on this site?

Freeze it - it freezes fine and heats up great in the microwave.

If you don't want to freeze it I would stir fry with whatever you have lying around.

I don't know what these are. Also, I don't have enough of the right veggies around to do a good stir fry (although that sounds like a really good idea) and I don't have any bell peppers.

I love boudin (I know, hypocrite, but I don't like ground beef nearly as much as pork), but I don't have the expertise (or the pork parts) to make that...I don't think

Calas is like a rice fritter.

Arancini is like a fried rice ball. Italian boudin ball, if you will.

You could google them and look at some recipes. They're not difficult, but good.

I live near LSU and gameday is tomorrow. Traffic on my street won't calm down until after 9 tonight and I'll never get my spot back.

Okay. Got it. Then, I pick a. unless you're going to eat it outside in the sun. I eat gumbo all year long. Had it twice last week. I have AC, though.

I have AC as well. I just get the feeling that eating a bunch of gumbo and then walking to the stadium to sit in line at the student gate for an hour and a half to get in the stadium an hour plus before kickoff in 100+ heat indexes might not be the best idea.

Mince onion
Put mined onion in a skillet with some butter
Add cubed thicken thighs dusted with some salt
Reduce heat and cover and simmer for a while

I don't see much difference in eating gumbo or a chicken stew or gravy and rice. It's not like your body is going to stay hot after you eat it until you overeat and that's not about temperature of the food. I think it's so strange that people talk about not eating gumbo in the summer, but they eat rice and gravy and all manner of smothered dishes and etouffees over rice. Cracks me up.

Okay, you can make a cold rice salad and stuff it in a tomato if you have any.

OR, pay for someone to go get you some bell pepper and bring it to you. That's a hot dish, too, though.

The laziest thing is to put some in some scrambled eggs and have it for breakfast. Won't use up much of the rice, but you'll like it.

Eggplant rice dressing

Ingredients
3/4 pound leaf ground beef
3/4 pound leaf ground pork
2 cups chopped onions
1/2 cup chopped celery
1/2 cup chopped green bell peppers
4 medium-size eggplants, peeled and chopped
1 cup water or chicken broth
Salt, freshly ground black pepper and cayenne to taste
Pinch of thyme
3 cups cooked long-grain rice
2 tablespoons chopped parsley leaves

Steps
Brown the beef and pork in a large heavy pot. Add the onions, celery, and bell pepper and cook, stirring often, until they are wilted, for about five minutes. Add the eggplant and water and simmer until the eggplant is very tender and soft. Mash with a fork. Season with salt, black pepper and cayenne. Add the thyme. Add the rice and parsley. Mix well and serve warm. Serves 8.

That looks good, too, but I bet he doesn't have any eggplant.

1. Take half of the rice to LSU lakes, dump in corner.
2. Set up on corner at dawn, shoot limit of teal coming to eat rice.
3. Pot roast teal with some andouille.
4. Serve teal and gravy over remaining rice.
