Kalua Pork - Hawaiian-ish? Any ideas?

I'm throwing a dinner party as part of a fundraiser auction item in a couple of weeks. The theme is Luau so I need to curb my recent treament of the almighty pork shoulder to fit this theme a bit better so I need any help I can get.

I've smoked plenty of bone-in shoulders but I've always done them heavy on the smoke...more of a BBQ style. My thought was to go with a sea salt rub, toss into the smoker for just two hours maybe, wrap in some banana leaves w/ some chunked up pineapple and then throw it into an enameled cast iron pot into the oven to finish it off.

I'm looking to do something like pulled pork and avacado sliders or something of that nature.

Anyone done something like this? Coconut usage? Thank you in advance.

Fry spam and put pineapple on it. Eat between two doughnuts.

I would marinate it and then slow cook

Make a paste out of ginger/onion/garlic and add some pineapple juice, a couple teaspoons of coriander and a teaspoon of ground cinnamon

Mix it all together and let it marinade overnight

Or instead of marinating overnight you could just pour this mixture in at the stage where you move from the smoker to the banana leaves where you finish in the oven

Be sure to soak the banana leaves
