Best brand of ricotta cheese



I'm going to be cooking up some lasagna this weekend. Anyone have a particular brand of ricotta that they think is the best?

I honestly can't tell the difference between the brands I've tried, but I do recommend getting whole milk ricotta as opposed to part-skim. The taste is SO much better.

Go to an Italian deli and get fresh ricotta. It makes a huge difference.

I usually just grab whatever

I think it helps your cheese mixture if you crack a couple of eggs in there. Gives it a richer taste IMO

I usually make a big batch if I'm going to make it. 32 oz container of ricotta and usually about 6 oz of parmesan and a couple of eggs cracked into the mixture. Lightly salt and add some chopped herbs.

You can also use cottage cheese in your lasagne.. Some like it better.. I do.. Whatever you choose, use whole milk.. Don't go for that 1/3 part skim foolishness.

Polly-O, if you can find it. Nor-Joe on Frisco in old Metairie has several different brands.

I actually mix ricotta with cottage cheese for my lasagna, stuffed shells, and manicotti. IMO, ricotta is too dry by itself, but cottage is too wet. And no, I don't care if it's not "authentic".
