Tripas recipes (Intestines) ?

Anyone has a recipe for tripas? My wife came home with a pound of it and says, "I got all that for under 3 bucks". I say, "There is a reason for that!"

Saw some recipes that call you to boil it for a while, then grill it with red pepper flakes and seasoning and serve on a tortilla with pico de gallo, guac, etc....What say you?

The Italians do wonderful things with innards. Google trippa ala romana and check out Mario Batali's recipe, or trippa alla fiorentina. Both versions cook tripe in tomato sauce to great effect. And lampredotto on a bun (stewed tripe) is a Florentine mainstay, kinda like roast beef poboys in NOLA, an essentially working class food held dear by many.

But first, you need to identify the sort of tripe you have: book/leaf? honeycomb? Etc. Many cultures around the world use the different parts in different dishes.

My dear departed Italian grandmother used to make it. One of these days I'm going to take a stab at it. Problem being, I'm sure I'd probably be the only one who'd eat it.

I've had Batali's at Babbo.

The only place in New Orleans I know where you could get it, is recently closed - A Mano.

Both were really good and really close to my grandma's version. So if I try, I'll use Batali's recipe.
