Can someone suggest a crock pot chicken taco recipe?

Haven't used the crock pot in a while. I searched, but didn't find anything on the board.

I'm sure there are far more advanced ones, but a very simple one I used back in college:

Pack of boneless skinless in the pot
mix a jar of salsa with a pack of taco seasoning and some extra cayenne, and pour the mixture on top of the chicken.

Cook til done.

Not sure why you'd want to use a crockpot to cook boneless, skinless chicken: it will cook in 10 minutes in a skillet on the stovetop....even less time if you cut it into strips before sauteeing or pound it thin first.

Frozen boneless breast filets
Jar of salsa
Can or 2 of black beans
Chopped onion
Chopped peppers (jalepeno, serrano, what have you)
Taco or fajita seasoning.

Cook on low all day, as long as you start frozen. If they are thawed, you'll dry them out, so you need to go shorter time.

Remove the chicken and pull for tacos. You'll also have a side of black beans.

Easy dinner that the kids love, and plenty of leftovers.

This is in my crockpot at home as we speak. This is the first time I've ever tried it so I can't say its going to be great yet, but I can report back later tonight or tomorrow on how it is. Looked like a pretty good recipe to me. LINK

And don't mind R2R, this isn't the first time he has hated on crockpot chicken.

I'm pretty sure you're not supposed to do that.

And I'm with everyone else, there is no need to do chicken tacos out of a crockpot when you can cube breast meat and cook it really fast in a skillet. 2 lbs of breast meat, 2 packets of Taco Bell fajita mix, and you're good to go. People love when I cook them, and they are shocked when I tell them that's all there is to it.

I used basically the same recipe for a pork roast except instead of salsa, I used a Dos Eqis Amber for the liquid. Came out great.

I'm gonna do something crazy and actually agree with R2R on something. I just see no point to this when you can get a much better meal in way less time.

When did you turn it on and when is it going to be done? Because that recipe says to cook for 2 to 3 hours.

Pointing out that cooking boneless skinless chicken all day would result in an overcooked mess is "hating?" Pardon me. I guess the truth gets you all riled up.

Looks good, I'm not worried about R2R. I'm not planning on cooking it more than 4 hours anyway.

I believe most of the stores sell the premade pulled pork or chicken. That may be easier and about as good as messing around with crock pot chicken.

Boneless, skinless chicken breasts can be alarmingly dry....like newspaper and sawdust mixed. Overcooking them is tres easy, and they absolutely do not benefit from low and slow cooking. If you're dead set on crockpot chicken, at least use something on the bone with a little fat. Like bone-in thighs with the skin removed...

Then just cook it when you get home. Chicken out of a crockpot is terrible compared to just about any other way of cooking it.
