Smoking a butt, the dome thermo on my wsm is reading 290-300. But my maverick is reading 250-260 at the grate. I've always had the opposite experience, so any suggestions.

I dont understand the question. The temp at the grill is what you would want to watch.

That is weird. Supposed to be the opposite. You reading it right? I'd trust the Maverick over anything.
Is only the dome getting some sun on it?

I read that site. It's the opposite is my point. The meat isn't that close to my grate thermo and its not getting that much sun. I'm truly confused.

Boil some water, pulle the grate probe and put it in the boiling water. Shoul read somewhere near 212°. if so, the dome thermo is bad.

Also, your butt will be ok.

Everything I read says the dome is generally 15-30 degrees higher. Unless you dont use water. Bottom line is not to trust the dome temp.

Thanks. Not worried about the butt but worried about future things.

I wouldn't worry about the dome temp. I would test the maverick temp though for accuracy. Just to make sure.

I believe all of my smokes had the dome temp 20 or so lower than grill temp. Which is what it's supposed to be. I know for sure it was this weekend.

Yeah, that is normally what happens. I'm going to test it when I'm done this butt.

The conventional wisdom is that temperatures measured at the lid will be higher than those measured at the top cooking grate, and that temperatures at the top grate will be higher than those at the bottom grate. Is this true? If so, what are the temperature differences?

Its a bullet smoker with a water bowl. The temps are supposed to be higher at the dome. Then it circulates back down. The temps right above the water bowl are typically the lowest.

I've always had the expire ce bbrou is talking about. Dome is a foot away from gate and normally doesn't read as hot as actually is. But maybe I'm wrong.

Dammit. Now I'm confused. I don't know. I'll have to go smoke something to see
